I'm not sure if this is a bug but whenever i try to record a voice track, it records it to a stereo file with the audio all on one side. it does this depsite how a fiddle with the encoder settings. i am having to manually change the track to mono in an external editor. is there a way around this?

In the related mixer input channel (from which you are recording) you can set the 'Mono' option.
In addition you can also right-click and specifiy the mono processing option, as explained here:
